Healthy Cookies
Ingredients
- 1/4 cup light olive oil
- 1/4 cup MCT oil
- 1 tsp liquid lecithin
- 1 egg
- 1 tsp vanilla
- 1/3 cup honey
- 1/4 cup peanut butter
Beat ingredients together
Add:
- 1 cup quick oats
- 1 whole wheat flour (or less, stir in 3/4 cup and see how stiff the dough is)
- 1 tsp baking soda
- 1 tsp baking powder
Directions
- Mix all together.
- Bake at 350 degrees for about 7-9 minutes or until done.
Variations
- 1/4 cup coconut and 1/4 chocolate chips
- 1/2 to 1 tsp almond extract and 1/2 to 1 tsp cinnamon
- 1/2 to 1 tsp cinnamon and 1/4 cup raisins
- 1/4 cup chopped dates, prunes
